Garlic Butter Porterhouse Steak with Crispy Potatoes

Ingredients:
- 1–2 Porterhouse steaks (room temperature)
- Salt & cracked black pepper
- 2 tbsp olive oil
- 2 tbsp butter
- 3 garlic cloves, crushed
- Fresh rosemary or thyme
- Baby potatoes, halved
- Optional: lemon wedges
Method
Step 1 - Prep the potatoes:
Toss halved baby potatoes with olive oil, salt and pepper. Roast at 200°C for 25–30 mins until golden and crisp.
Step 2 - Season the steak:
Pat the steak dry. Generously season both sides with salt and pepper.
Step 3 - Sear:
Heat a heavy pan (preferably cast iron) until very hot. Add olive oil.
Sear steak 2–3 minutes per side for medium-rare (adjust to preference).
Step 4 - Baste:
Add butter, garlic and herbs to the pan. Tilt the pan and spoon melted butter over the steak for 1–2 minutes.
Step 5 - Rest:
Remove steak and rest for 5–10 minutes before slicing.
Serve with crispy potatoes and a squeeze of lemon.
Tip: Grass-fed beef cooks slightly quicker, don’t overcook.
