Slow-Cooked Red Wine Diced Beef Stew

Serves: 4
Cook Time: 2–2.5 hours (or slow cooker 6–8 hours)
Ingredients:
- 500g–1kg diced steak
- 2 tbsp flour
- Salt & pepper
- 2 tbsp olive oil
- 1 onion, diced
- 2 carrots, chopped
- 2 garlic cloves, crushed
- 1 cup red wine
- 2 cups beef stock
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 2 bay leaves
Method
Step 1 - Coat beef:
Toss diced steak in flour, salt and pepper.
Step 2 - Brown:
Heat oil in a heavy pot. Brown beef in batches. Remove and set aside.
Step 3 - Build flavour:
In the same pot, sauté onion, carrot and garlic until soft. Stir in tomato paste.
Step 4 - Deglaze:
Add red wine and simmer 2–3 minutes, scraping up browned bits.
Step 5 - Simmer:
Return beef to the pot. Add stock, thyme and bay leaves.
Cover and simmer gently for 2–2.5 hours until tender.
Serve over mashed potatoes or crusty sourdough.
Slow Cooker Option: After browning, transfer everything to a slow cooker and cook on low for 6–8 hours.
